Summer Food! Fried Green Tomatoes & Pear Salad

When it's warm out, my body craves fruits and veggies.  For dinner one night I made tacos and needed something fun to go along with them.

For an appetizer (something to munch on while the tacos where being made!), I made my first batch of fried green tomatoes.  They were simple to make and were super yummy!  *Warning- cleaning up the frying pan isn't quite as easy!

Bought the green tomatoes at the grocery store, and they came with instructions.

Cut up 4 tomatoes (just a few are seen in the pics).


Used 2% milk and seasoned yellow cornmeal with salt, pepper, red pepper.


Dipped the tomatoes in the milk then in the cornmeal mix.


Fried them in canola oil until brown.


Ta-da!


We dipped them in chipotle sauce (Miracle Whip makes a good chipotle) and ate them up!
There were a few left over, so I put them in the fridge and warmed them up the next day in the oven.


For dessert I made a pear salad.  I bought a red pear and a green pear.  I cut them up and mixed in Cool Whip, carmel topping, vanilla extract, whipping cream, sugar, lemon juice, and cinnamon.  I just glanced in the fridge and pantry to see what might go good together!  The whipping cream really gave it a good texture.
The pear salad started getting a little runny after 2 days, so I recommend only fixing what you'll eat in one day.

Looks good! For hot days I like Jamie Oliver's warm egg & bacon salad, or French style salad inlcuding feta cheese, olives, tuna, boiled egg etc or I'll come to a BBQ any day!!

Julie, I'll have to look up the Jamie Oliver recipe, especially since he's trying to get Americans to eat healthy on his new show!
